Bottling Notes:
Founded by Stephen Carroll in 2012 on Negros Island, Philippines. The sugarcane is harvested by hand through October to May and transported to a sugar mill that dates to the 1920s. The sugar cane is then crushed, and a rich sweet molasses is transported to Bago Distillery where it is then fermented and distilled on a column still.
Aged for 4 years in American Oak, the rum is then transported into an array of Sherry Casks, including PX, Fino, Cream and Palo Cortado for 18 months before blending. and bottling.
Don Papa is just perfect straight, or on the rocks or in your favourite cocktail.
Tasting Notes:
Nose: Fruity and nutty
Palate: Rich Christmas notes of dates, cinnamon and nutmeg
Finish: Long and full bodied with pepper and spice.
