Holyrood is a modern distillery in the heart of historic Edinburgh. Inspired by their surroundings and never afraid to experiment, they are dedicated to shaping the spirit of tomorrow. Each New Make draws upon a different element of the brewing process, from yeast selections to specialty malt ratios, culminating in Made by Edinburgh New Make which is at the heart of the inaugural public cask program.
This is a nod to Edinburgh's rich brewing history. Chocolate malt works well with the balance of fruity yeast and sweet distillers malt.
Tasting Notes:
Nose: Distinct, nutty and rich, with coffee and rich cocoa.
Palate: A big hit of bitter coffee and rich dark chocolate, there are savoury notes with rich malt and salt.
Finish: Short with a subtle bitterness.
